Ometepe – Biosphere…Biósfera
The island of Ometepe in Nicaragua now forms part of the Man and Biosphere (MAB), a world network program from UNESCO. Ometepe, formed by two active volcanos (Madera and Concepción), is found in Lake Cocibolca, the 10ths biggest lake in the world. The island itself is considered the biggest island in the world situated within a freshwater lake. It’s home to some 30,000 inhabitants who live in harmony with it’s natural and breathtaking surroundings.
The island of Ometepe (2010) in Nicaragua now joins Bosawás (1997) -the largest tropical forest in Central America- and the Rio San Juan-Nicaragua Biosphere Reserve (2003) as part of the Man and Biosphere (MAB), a world network program from UNESCO.
La isla de Ometepe de Nicaragua ahora se clasifica como Reserva de Biosfera según la Coordinación Internacional del Hombre y la Biósfera (MAB) de UNESCO. Ometepe, formada por sus dos volcanos activos (Madera y Concepción), se encuentra en el Lago Cocibolca, considerado el décimo más grande del mundo. La isla misma se considera la más grande del mundo situada en un lago. Viven 30,000 habitantes en harmonía con la naturaleza y sus alrededores.

Delicious pork rinds in the making (vigoron)
We had a nice little supper yesterday, fried pork rinds (with a bit of meat on them) and a tomato, onion, and lime juice salad. The greasy pork rinds wonders were washed down with some ice-cold Pepsi. This is a typical process in Nicaragua (in particular we were in El Valle de la Laguna, Masaya). And to paraphrase the Nicaraguans: “Have no fear, it’s just once a year.”
Cenamos anoche estos chicharrones (con carnita pegada, por supuesto) y ensalada de tomate y cebolla. Estas maravillas se enjuagaron con una Pepsi bien helada. Claro, esta cena es típica en Nicaragua (la comimos en El Valle de La Laguna, Masaya). Y como reza el dicho: “Una vez al año no hace daño.”

A grave: Then and Now/Una tumba: Antes y Ahora
Last November, I ran across these grave diggers near El Valle de La Laguna de Apoyo, close to Masaya, Nicaragua. It was very interesting to see them work. Today, I passed by the same spot and…lo and behold I saw a vast improvement, as you can see in the pictures. I guess it’s true that time does heal many a wound….
En noviembre, encontré estos cavatumbas en El Valle de La Laguna de Apoyo, cerca de Masaya, Nicaragua. Era muy interesante ver su trabajo. Hoy, pasé por el mismo lugar y…cual fue mi sorpresa que había mejorado mucho el lugar, como ves en las fotos. El tiempo se encarga de sanar muchas heridas….
Parade of stuffed animals/Desfile de peluches
On a recent tour of the Nicaraguan countryside, between Granada and Masaya, I noticed a strange parade of stuffed animals…all hung out to dry, literally. Since these critters get dusty, they also get a periodic bath. Later, they are hung on wire fences, in trees and by a string to dry out and then be lovingly caressed by little boys and girls who claim them as pets.
En una gira reciente en el campo, entre Granada y Masaya, noté un extraño desfile de peluches…colgados por todos lados. Ya que se empolven estas criaturas, también necesitan de un baño periodicamente. Despues, están colgados en alambres, en árboles y por cordones para que se sequen y luego puedan ser acariciados nuevamente por los niños y niñas a quienes pertenecen.

The news is out. Survivor will be filmed in Nicaragua for the 21st and 22nd seasons. The similar concept show ‘Sobreviviente’ from Spain has also committed to filming their next season in Nicaragua. Italy’s version of this program has already been filmed on the east coast of Nicaragua. Who will be next?
Chicken stew Nica-style/Pollo tapado
Umm umm that looks good huh? That would be three chicken legs, cubed carrots, potatoes and chayotes all whipped up in a slightly sweet, slightly salty sauce (that might include ketchup, worcestershire sauce and even Coca-Cola). Ask for it at the local market, cafeteria or any Mrs.’ house.
Umm umm ¡Que rico se ve eso! ¿verdad? ¿Qué es? Hay van tres piernas de pollo, zanahoria, papa y chayote cortaditos en cubitos y combinados en una salsa ligeramente dulce y ligeramente saladita (hecha quizá de salsa de tomate, salsa inglesa y hasta Coca-Cola). Pedílo en el mercado, comedor y la casa de Doña Fulana.
